Introduction of Tea
- Black tea is one end of the strength spectrum as it undergoes the most oxidization process producing a more potent flavour. While tea is on the other end, being the least oxidized.
There is a special name for uncurling of tea leaves as hot water is poured over them, It is called “the agony of leaves.” - Darjeeling tea is more expensive as it is grown only in 70 square mile area at the foot of the Himalayas. Because of this it is referred to as the ‘Champagne of teas.’
